As you can see I'm not riding my bike at the moment. Instead, today I'm finding thick long socks to be my best friend, enjoying my heated matress cover, and savoring homemade beef stew.

A hearty Christmas salad

Consisting of:

Spring Mix

Roma Tomatoes

Avacados

Smoked turkey strips

Tuna

Hand roasted almonds

Cucumbers

Green and red peppers

Freshly grated parmesean cheese

Olive oil

Lime juice

Balsamic vinegar

Salt and pepper

As Rachel would say, "Yum-o!"
